quickie
anyone got a really good beetroot dip recipe?

Hi there, I'm a friend of Kris Howard. I have been accused by many friends of being a beetroot freak. I love, love, LOVE it, eat it at any opportunity, think it's massively under-rated, and love finding new ways to cook it. I should actually work for the Beetroot Marketing Board (if they existed).
This is a Madhur Jaffrey recipe and it's called Pureed Beetroot Salad, but it's basically a dip. This doesn't make a huge quantity, but you can always double.
1 good sized beetroot (c. 180g)
4 tablespoons walnuts
30g stale white bread, crumbled
1 clove garlic, peeled & coarsely chopped
3 tablespoons olive oil
3 tablespoons red wine vinegar
1/2 teaspoon salt
Chop beetroot coarsely. Combine all the ingredients in a blender or food processor. Blend until smooth.

oooh, thanks heaps.
I've seen a few recipes on the net but I wanted to use one that had been tested, ya know.
I'll give this a go.
