Let's hear it for beetroot!
I've come late to the whole beetroot love fest.
I don't think I ever really ate them before I moved to Australia. But Aussies just LOVE them. They put them in/on everything. Salads, burgers, every kind of sandwich, dips, etc. So I've really come to appreciate these little red beauties. Seriously, if it weren't so late I would start making this salad right this minute. Beets and apples. Sweet and earthy. yum! And I didn't know that 'beetroot has been known to fight High Blood pressure, cancer, cholesterol, and constipation'. (beets=good poopin'. double yay!)
We were planning on firing up the grill tomorrow anyway, so I might just have to give this side dish a try.

LOL, they are very good. But they are not Australian food. Only people in NSW and QLD eat them lots...
